Meringue Cupcakes

So after my Whoopie Pie fiasco, I had to figure out what ELSE I could make for Kristina’s birthday that would be fun, different, spectacular and actually taste good! Individual lemon tarts were a possibility but just too much work and I’d have to go out and buy little tart pans.
I was googling meringue and found a Merigue Cupcake recipe on MarthaStewart.com. Her’s were pink and perfect and were served with a raspberry curd. I made a meyer lemon curd with lemons from Janet’s tree (I used 13 lemons!). Also served with creme fraiche.
Soooo good. Highly recommended. Will make again but probably not in cupcake form.
