Janet grows Meyer lemons in her backyard. I developed this recipe after she gave me 30 lemons from her tree. At first glance, these lemon bars seem complicated but they are really easy to make. I use homegrown Meyer lemons but this recipe will work with other lemons too. Here’s the ecipe for easy to make and super lemony, Lemon Bars. Video below.
LEMON BARS
Makes 24 bars
CRUST
2 sticks butter, softened
1/2 cup sugar
2 cups flour
1/8 tsp salt
LEMON LAYER
6 eggs, room temperature
2 1/2 cups sugar
2 Tbsp grated lemon zest
1 cup freshly squeezed lemon juice
1 cup flour
Confectioner’s sugar for dusting
Preheat oven to 350°F
Butter a 9” x 13” baking pan
With an electric mixer, cream butter and sugar together. Combine flour and salt, then with mixer on low, add to butter until just mixed. Press into a ball.
With floured hands, press dough into the baking sheet making a 1/2” high ridge around the edge.
Bake for 15 to 20 minutes until lightly browned. Let cool. Keep oven on.
Whisk together all of the lemon layer ingredients until well combined. Pour over crust.
Bake for 30 to 35 minutes. Cool. Cut into squares and dust with confectioner’s sugar.
